It was recorded that on the 6 trips to south Yangtze River, Qianlong Emperor of Qing Dynasty never missed a place called Mudu town in suburb area of Suzhou city. But he did not go there to enjoy the best gardens of Suzhou, but to taste the “Manchu Han Imperial Feast” prepared there. “Manchu Han Imperial Feast” is famous as the top grade feast in China.
But because “Manchu Han Imperial Feast” is such a high level feast, it is hard for the ordinary people to enjoy it. Anyhow, you can enjoy the full-course feat of Linwu duck in Chenzhou city. Linwu duck which is as one of the eight famous ducks of China is famous for its good taste and long history. It was used as a kind of imperial tribute in ancient China.
Linwu Hotel’s chefs took the best features of Linwu duck and developed a “Full-course of Linwu Duck”. Currently, 98 courses with local features have been developed, all of which are made of Linwu duck. Following are some typical ones for your reference:
First course-“beancurd stuffed with Linwu duck”: beancurd stuffed with minced pork is one of the famous courses in Chenzhou city. But different from the traditional course, Linwu Hotel’s beancurd stuffed with Linwu duck is made of chest meat of Linwu duck, water chest-nut, chopped green onion, and etc. A vivid duck carved by pumpkin will be shaped the appearance of the course. It does not look beautiful, but tastes well.
Second course- “the peakcock spreads its tail”: in one corner of the square dish is placed a head-shape of peakcock and tens pieces of mango are spreaded behind the head. All the flesh of mangos have been removed, but inserted with diced duck, cashew nut and some other ingredients. On the sides of the dish, 9 pieces of carrot are decorated there. Red, white, yellow and green colors make the course look like a peakcock spreads its tail.
Third course-“eight-treasure duck in the shape of gourd”: at the first look of the course, you may confuse what is the gourd set on the dish. Actually it is the eight-treasure rice covered by the skin of Linwu duck. Of course, Linwu duck meat is one of the eight treasures of the rice. It is highly nutritious.
Fourth course-“tip-top”(Dingguagua): it is made of the heads of Linwu duck which are marinated by special brines. Because of its special taste, it is honored the name of “tip-top”.
Fifth course-“pepper fried Linwu duck”: it is a rural taste course that made of mild peppers and Linwu duck meat. It was enrolled into the list of 11 boutique Hunan dishes in 2010 Shanghai Expo.
Sixth- “ordyceps flower duck stew soup”: it stews the ordyceps flowers and duck meat to be crisp. Because the ordyceps flowers are helpful to relieve asthma and check sputum, this soup is a good tonic.
“Full-course of Linwu Duck” which is developed on the basis of local Linwu duck by Linwu Hotel is awarded with the title of “Chenzhou famouse feast”. The leaders of Linwu County Party Committee and Linwu Government placed great attention on the propaganda of the course and encouraged the hotel to innovate more dishes to carry forward the national catering culture and contribute more to the social and economic development.
